The yogurt has to set in a warm place.

Now, in the summer months, your home should be the right temperature for this process.

However, you will need to judge if the inside of your house is warm enough.

As such, you can simply leave it outside.

In cooler months, though, you cant do this.

Instead, place the yogurt in the oven, but dont turn the heat on!

Just put the oven light on and leave the yogurt for the recommended amount of time.

What Ingredients Do You Need To Make Yogurt

Lets talk about the two ingredients youll need to make probiotic yogurt: milk and a yogurt starter culture.

  • Milk: I recommend starting with organic, grass-fed whole cows or goats milk . You might be tempted to go for a lower milkfat, but really, you want the whole kit-and-kaboodle herethats what makes the end result creamy, thick, and packed full of good-for-your-gut probiotics. You can use raw milk, pasteurized, or ultra-pasteurizedall three will work just fine for yogurt-making.
  • Yogurt starter culture: Youll need to inoculate your milk with some starter bacteria to get the yogurt-making process going, and there are two ways of going about this. You can either use premade plain yogurt with active cultures or you can use a freeze-dried yogurt starter culture.

Okay Whats So Great About Instant Pot Yogurt

Before electric pressure cookers became a thing, I made my yogurt at home on the stovetop and using a heating pad to keep the temperature even while the yogurt fermented. It works just fine, but an Instant Pot makes the whole process even easier! Thats because the Instant Pot is programmed to keep the fermentation temperature at an even 110°F during the culturing time. It makes it completely no fuss! I have never had a batch of yogurt fail since getting my Instant Pot years ago.

Which Probiotics Are Found In Yogurt And Supplements

A product of fermented milk, yogurt naturally contains probiotics from the species Lactobacillus bulgaricus and Streptococcus thermophilus, according to the California Dairy Research Foundation. Additional live bacteria are commonly added to enhance yogurts probiotic content. These same species can be found in probiotic pills.

A December 2010 study published in the International Journal of Food Microbiology studied human saliva and fecal samples after subjects consumed either yogurt or probiotic pills. The researchers determined that both options provided the body with comparable amounts of microorganisms. If, however, you are looking to supplement with a probiotic strain not found in yogurt, consider taking supplements or incorporating another food sources known to contain those probiotics.

In addition to ensuring that you buy quality canned coconut yogurt and probiotics, , I have a few more tips to ensure this recipe is a success.

Make sure that you are buying full fat, organic and canned coconut milk.

Although I havent tried the tetra-pack, or using low-fat coconut milk for this recipe, Ive read multiple sites that stress the importance of full fat and canned coconut milk. If you opt in for tetra-pack or low-fat coconut milk its possible the recipe wont work.

Id also recommend to use organic coconut milk, as typically they are higher quality. I tested this recipe using a quality organic can of coconut milk vs. a cheaper non-organic can and the cheaper one didnt work. .

Use a glass mixing bowl, and ensure that its sterilized .

Thats because we dont want any substances or metals to affect the fermentation process. Therefore I also suggest to use a wooden spoon to mix the coconut yogurt instead of a metal one. .

1-2 days for fermentation:

The fermentation time for turning this coconut milk into homemade coconut yogurt is typically 1-2 days. Depending on how warm or cold your house is, and whether its winter or summer can speed up or slow down the process. I find 36-48 hours is the sweet spot for a thick, tangy coconut yogurt. After this, you can place the yogurt in the fridge. It will keep for up to one week.

Which Coconut Milk Should I Use For Yogurt

4 things to look for when choosing a coconut milk to make yogurt.

  • Any brand with over 5% fat will make good coconut yogurt.
  • The higher the fat, the thicker the yogurt.
  • Choose coconut milk or coconut cream you like the taste of as the flavor comes through in the finished yogurt.
  • For a lighter, lower-fat coconut yogurt, make a ‘half and half’ batch by blending a can each of high fat and low-fat coconut milk.

    All you need is two ingredients canned full-fat coconut milk and probiotic capsules.

    An exceptionally healthy fermented food, coconut yogurt is easy to make and is perfect for parfaits. Its unsweetened and has more healthy bacteria than a store-bought yogurt.

    Ingredients:

    • 1 can of organic coconut milk
    • 3 dairy free probiotic capsules
    • Directions:
  • Mix the milk and probiotics by opening the capsules and adding the contents into the coconut milk. Discard the capsules.
  • Optionally, add stevia or your sweetener of choice.
  • Close the lid tightly and shake.
  • Store the jar in a dark corner on your kitchen counter for three days, shaking or stirring with a clean spoon every 12 hours.
  • Then, refrigerate your yogurt, and it will thicken. Once thickened and chilled, serve with your favorite granola, berries, nuts, and a drizzle of honey or maple syrup. Trust me, the jar will be gone very quickly!

    Homemade coconut milk yogurt is a rich and creamy dairy-free yogurt. Unlike other vegan yogurts coconut milk yogurt can be as thick as you want without any additives. Just use a good quality preservative-free coconut milk that contains some coconut cream.

    The thickness of the coconut milk will determine how thick the yogurt is. Personally, I like to use coconut cream or a blend of coconut milk and coconut cream for thick and creamy vegan yogurt.

    What Is The Best Culture For Coconut Yogurt

    Here are a few options for culturing coconut milk, including some advice for each type of culture.

  • Store-bought vegan yogurt: I have tried several different vegan yogurt brands, and they all made delicious coconut yogurt. In fact, I find that vegan yogurt brands work better than dairy yogurt for culturing coconut milk. Vegan yogurts tend to contain thermophilic cultures and will need to be heated to 110 F for culturing. If you want to use vegan yogurt, then I recommend dividing the tub of yogurt into small containers and freezing them so you can make lots of batches with a single tub of yogurt.
  • Powdered vegan yogurt culture: Buying a vegan yogurt culture is the best way to get really active lactic bacterial culture. If probiotics are your main goal, then I recommend this option. And considering the price of vegan yogurt, its actually quite affordable.
  • Dairy yogurt culture: I have found that it takes longer for dairy yogurt to culture coconut milk, however, it will eventually sour. Just like regular yogurt, coconut milk will need to be kept at 110F for culturing.
  • Milk kefir: Coconut milk kefir is really easy to make. I dont recommend it for your main kefir grains, but if you want to make cultured coconut milk with a kefir baby, you should be able to get a few batches. This is my main way of making homemade coconut milk yogurt because I always have extra kefir grains.
  • How To Serve Coconut Milk Yogurt

    I typically have plain coconut milk yogurt for breakfast with fresh fruit and a sprinkle of grain-free granola or muesli. Another great add-in is this high-protein cereal with chia seeds.

    If you dont like plain yogurt or want switch things up a little, there are many ways to flavor plain yogurt and create exactly the kind of taste you want. Here are some of my favorite ways to flavor yogurt to get you started:

    • Layer ½ cup pureed fruit with 1 cup yogurt.
    • Swirl 3 Tbsp. jam into 1 cup yogurt.
    • Add a sweetener, such as maple syrup, date syrup, or coconut nectar, to taste.
    • Stir in 3 drops of extract vanilla, lemon, orange, cherry, and strawberry are my favorite- per cup of yogurt + sweetener to taste.
    • Mix in 1 Tbsp. cocoa powder + 1 Tbsp. maple syrup per 1 cup yogurt.

    Make sure you add any of the flavorings after the yogurt has finished culturing so you dont upset the bacteria.

    And, once you have made your first batch, you can actually use a small portion of that as a starter for your next one!

    What Are Good Flavorings For Coconut Yogurt

    I love to make this coconut yogurt plain, and then add my favourite flavouring with fruits.

    Some of my favourite combos are:

    • fresh fruits like berries, peaches, or mango
    • canned fruits like pears or apricots

    When looking for yogurt with probiotics for yeast infections, lactobacillus is said to be the key ingredient to look for. Lactobacillus is a type of bacteria found naturally in the body, usually in the mouth, intestines, and female genitals. When shopping for yogurt with lactobacillus, check the label for the words live and active cultures. This ensures that the yogurt contains at least 100 million cultures per gram at the time of manufacture.

    Chobani is a greek-style yogurt brand that is very rich in live and active cultures, including lactobacillus. Plus, its gluten-free, kosher-certified, and contains no genetically modified organisms . Its also low in sugar and calories, with just 4 grams of sugar and 127 calories per cup serving, and no artificial flavors or preservatives are used.

    What You Should Never Do When Making Yoghurt At Home + Coconut Yoghurt Recipe

    Ever since my good friend Jac told me about her favourite coconut yoghurt, Ive been a little obsessed with figuring out how to make my own. Actually, thinking about it, yoghurt making has been on my radar for a lot longer than that.

    You see, I love fermented foods . At uni I majored in food microbiology and for my honours thesis delved into the bacterial populations of blue vein and camembert cheeses. Partially so I could play around with bacteria but mostly so I had an excuse to eat more cheese.

    Then there were a few wayward years as a wine maker where I got up close and personal with more strains of yeast and lactic acid bacteria than Id bargained for.

    But I digress. Back to yoghurt.

    Making yoghurt is something I always knew Id do, one day.

    And that day has come!

    Over the last few months Ive been perfecting my yoghurt making skills of both regular milk based yoghurt, and the more exotic coconut yoghurt.

    The thing is, its no where near as complicated as youd imagine. Im kicking myself a little for not starting sooner.

    Important Tips Before You Get Started

    #1 Make sure you use clean jars, bowls , blender components , whisks, etc. We want them to be free of microbes that might interfere with the good guys we are trying to culture.

    To get everything ready you can run it through the dishwasher with hot water OR you can pour boiling water into the jars/vessels you are planning on using and use hot, soapy water to clean everything else. I keep my extra clean jars in a particular spot in my kitchen so that I can grab them when needed.

    #2 The maple syrup in this recipe is food for the good guys, so dont leave it out. Unlike dairy milk, which contains naturally-occurring sugars that feed friendly bacteria, coconut milk doesnt contain natural sugar. For that reason we need to add some to power our good guys.

    Honey is not a good option because it can negatively impact microbial growth a property which is great wound healing but not making yogurt which is why maple syrup is recommended. Although some might remain in the final product , most will be used up during the fermentation process.

    #3 If youre sensitive to dairy, make sure your probiotic powder is labeled dairy-free and/or vegan. A lot of probiotics have the same strains, but they come from different sources.
